I've been prepping for Autox season this year by putting together a Gopro/Data overlay setup the last couple weeks. My first test attempt was so successful, I figured I would share the setup in case anyone else wants data overlays for their car videos.

To record the data, you need an Android device with Bluetooth and Wifi (I'm using a Galaxy S7) and also a video camera.
To get the data from your OBD-II, you need a bluetooth connector. I use the ELM-327 ($15). These are found on Amazon:

The app that you need is "Trackaddict" which is free in the Google Play store:

To combine the video together, use RaceRender 3 Ultimate ($50):

The Gopro I went with was the HERO5 Session which offers 4k video and a smaller size than the standard Gopro, but no removable battery. But you can use any action camera or digital video camera you wish to record video.
Your Android device can record the video itself, but you will need a mount for it. I used a Gopro based mount so I could use my Gopro mounts to mount the phone in the car. A good suction cup mount is also needed of course (the Gopro brand one is extremely solid, go with that if you can).
Using the software does require some knowledge of video editing, its slightly more difficult than Adobe Premiere Elements but its not difficult.
Finally, upload it to youtube for everyone to enjoy!
