What should I let the dealer do as far as prep/inspection off the truck?

Vehicle should be here soon. What should I tell the dealer I want them to do or not do as far as vehicle prep and inspection, PDI, etc.

I know for sure no drilling for front plate, but what else should I tell them to not do?

Some guys say they want to be there for the whole thing - taking the shipping sticky paper off, etc. Is this a little much?

Tell them no holes, no dealer stickers. Other than that, just let them do their job ... Remember it's not yours till you sign on the dotted line.

They always forget the shipping blocks in the front coil springs. It's on the PDI, but that usually gets pencil whipped. Also the battery will need to be charged. It takes like 8 hours, but the dealer will only charge it enough to start the car.

Tell them to leave it dirty unless they have a world class detail shop out back.

I told them to do everything except any detail prep. Keep the plastic and stickers on. Taking it to my detailer once the purchase is complete.

Boils down to your comfort. My dealer knows how much of a pain in the neck I am so they don't bother to do much of anything and the keys get handed over to the GM pretty much as soon as the vehicle shows up. We will then walk the car and figure out who does what; I generally do as much as possible.

Shipping blocks and tire pressures to start. Make sure you get ALL the paperwork in the car (build sheet, etc.). Let them detail it ONLY if you are comfortable with how they do it!
And check it over with a fine tooth comb when they're done. You will miss things because of all the excitement!
